2024 Wild Boar Riesling
This wine has a great back story! James contacted the winery in the Finger Lakes where he was assistant winemaker about collaborating on a Riesling. They talked about style and zeroed in on a vineyard site.
The 2024 vintage had ripening conditions that were ideal that's reflected in the fruit concentration and richness of this wine. The wine is a blend of 8 different Riesling lots, each having its own fermentation strategy. Those strategies were developed with an eye toward preserving freshness and acidity in some lots, while others were centered around weight and texture. Some were arrested with significant residual sugar, and others were allowed to ferment to complete dryness. One of the lots was even wild fermented in amphora, while another was back sweetened with unfermented Riesling juice. The wine is a stunning example of an off-dry Riesling. The wine is almost clear and has a silver halo. The nose is a sumptuous combination of bosc pear and angel food cake. The nose extends to the palate and exemplifies the delicate nature of the finest Rieslings. The wine finishes with a touch of slate/minerality. Serve this wine at 53°-55° and pair it with Blue Mountain Trout, grilled prawns, creamy sauces, goat cheese, and spicy foods like Thai and Indian cuisines.
