2023 Wild Boar Cabernet Sauvignon
At our estate, we nurture beautiful Cabernet Sauvignon vines that serve as the foundation of our flagship Bordeaux blend, Hogback Mountain, as well as our reserve single-varietal bottlings. While our focus is on estate fruit, every so often, we discover something truly exceptional beyond our vineyard rows. When we do, we can’t resist the opportunity to craft something unique. The last time that happened with Cabernet Sauvignon was in 2018 – until now. For the 2023 vintage, we sourced fruit from two outstanding regions. The majority hails from the iconic Napa Valley, known for its depth and power, while a smaller portion comes from Walla Walla, Washington, prized for its structure and vibrancy. The result is a compelling and harmonious wine that reflects the best of both worlds. In the glass, this Cabernet shows a deep, dark ruby hue. On the nose, a rich medley of blackcurrant and cassis takes the lead, lifted by a whisper of redcurrant. The palate is smooth and inviting, with soft tannins, a touch of baking spice, and notes of mocha and roasted coffee that add depth and intrigue. The finish is long and graceful, echoing with hints of plum and that subtle mocha warmth. This wine pairs beautifully with bold, flavorful dishes: roasted or grilled meats, beef stew, or Chili Colorado. For plant-based pairings, try vegetable lasagna or eggplant parmesan. The wine is 100% Cabernet Sauvignon 74% sourced from Napa Valley and 26% from Walla Walla Washington. The wine fermented in stainless steel and elevaged for 18 months in a combination of French oak (80%), 40% new and American Oak (20%). It is 13.9% ABV
