2022 Wild Boar The Pursuit
This is the second Wild Boar Cellars Pursuit we have crafted at Stone Tower. The previous wine was introduced in 2017. The spirit of the wine is the same – paying homage to Thomas Jefferson, as well as a celebration of Virginia’s 400+ year winemaking history.
This wine is a polished blend. Its personality is comparable to a right bank Bordeaux style blend. Often with a Merlot driven wine like this there is a jamminess on the nose. With this wine, there is distinct aroma of red and black fruit – black cherry and plum, we also find a slight hint of cocoa. The lovely structure of the wine is brought to us through the artful use of Cabernet Franc and the addition of a bit of Petit Verdot. On the palate the smooth tannins are punctuated by the presence of a touch of minerality. The Petit Verdot adds to the structure of the wine with a lingering touch of violet as the wine comes to a smooth and long finish. This wine is elegant and stylish and while lovely to drink now will show new and exciting secondary and tertiary characteristics (see definitions) as it ages. The list of foods this wine will pair with seems endless. The merlot in this wine will complement chicken-based dishes try pizza with chicken, pulled pork sandwiches, Shepards pie, pork chops, flank steak. The wine will also pair well with a meaty fish, like swordfish. For the vegetarian grilled eggplant, bell peppers, and zucchini will be great. Try a flatbread with grilled vegetables. This wine is lovely now. It will develop new and different character as it ages – drink through 2029.
