2021 Wild Boar Pinot Noir
This Pinot Noir is a lovely example of a lighter bodied California style. Its lighter nature allows for the enjoyable red fruit – cherry and raspberry, to dance on the tip of your tongue. On the palate you experience the carryover of this red fruit with a soft wave of the classic juniper we often see in Pinot Noir. The fruit is sourced from the central coast of California which is often characterized by more fruit forward styles of pinot. This wine has a softer fruit profile making it particularly nice for drinking through the fall. The careful use of used oak softens and rounds the wine which finishes with a touch of vanilla. This is a lovely example of this varietal. Pair this wine with Salmon, Swordfish, or Halibut. If you are a carnivore the wine will complement lighter meats – great with roasted chicken, turkey, and pork. Enjoy this wine now through 2028.
