2021 Wild Boar Malbec
The 2021 Wild Boar Malbec is the first we have had since our offering in 2016. This wine is a classic example of wine produced from fruit grown in the Napa Valley. The diurnal shifts of the region coupled with the volcanic soils provide an ideal growing environment for Malbec.
The wine has an incredible nose of blackberry, blueberry, and touch of vanilla The wine carries these same beautiful dark fruit flavors onto the palate. The tannins are extremely smooth which leads to a beautiful smooth, velvety finish, likely partially contributed to by the Malolactic Fermentation (see below). From nose to finish the wine is lively while being soft with incredible nuanced. So many times, we see Malbec that is a big wine which is heavily extracted (see below) – Big and concentrated.
This Malbec pairs with many foods – Steak, Hamburger (especially with melted cheese!)
Barbecued lamb, beef or pork, Lamb with mint and herbs, Ribs. It is very lovely with slightly spicy foods like Chile or Fajitas. Pecorino, Comté, Gruyère, and even blue are great cheeses for the wine. We don’t often think of Malbec as a wine to serve with vegetables but throw some vegetables on the grill and the slight char will be a wow with the Malbec – especially corn on the cobb. This wine drinks beautifully now and you can easily enjoy it through 2029.
