2021 Estate South Fork
In 2021 we produced two red blends. The first, released in 2023 called Field Stone was a blend of four Estate varietals and this one is principally a blend of two – Cabernet Franc, Cabernet Sauvignon with pinch of Merlot. Generally, when these two are blended Cabernet Sauvignon takes the lead but, in this wine, we see Cabernet Franc in the driver’s seat. Looking across the world of wine to draw a comparison we arrive in in Tuscany where we often see this blend where it has been warmly adopted. Sassicaia – one of Italy's most famous wines and arguably one of the world's finest examples of the marriage of the two Cabernet grapes is similar in style and structure. South Fork exhibits similar characteristics of cassis and five-spice with round but firm tannins. South Fork also shows more secondary qualities of tobacco, coffee and some slight minerality. The easy pairing with this wine is beef but the structure and lively acidity partners well with many salty fatty foods. Because of its complex fruit and herb aromas and refined tannin, South Fork pairs well with all red meat, lamb, and game. Try it with Braised lamb shoulder and charred tomatoes. Meaty pizza or Italian herb stuffed mushrooms enliven this wine. Enjoy over the next 3-5 years
