2020 Estate Fieldstone
This wine is a polished wine similar in style to a Bordeaux blend. Several years ago we produced a Wild Boar wine called Sanglier Noble, a real favorite. This wine is very similar in character but the fruit is all Stone Tower Estate fruit. The wine is sophisticated and polished. The Cabernet Sauvignon Cabernet Franc combination delivers the vivid ruby color with aromas of ripe red and black fruit, currant, herbs, clove, tobacco, and a touch of white pepper. The merlot brings us a touch of blackberry, plum, and raspberry and elevates the herbal notes in the blend. The touch of Petite Verdot almost acts as the conductor and brings the orchestra together. Although we generally think of this style of wine as a Bordeaux style blend it would easily be grouped with some of the beautiful Meritage wines we see from California. Most people default to a hearty steak, which is a great pairing due to the fatty meat contrasting with the wine's concentration and firm structure, but this wine is far more versatile than that. Explore pairings like lamb, game, chicken, turkey, veal or grilled pork, hamburgers, meatloaf, mushrooms, cheese-based pasta, risotto. If you are eating cheese look to mild and medium-sharp Cheddar, Corvo, Edam, Glouchester, Muenster, Provolone (aged), Parmesan, Pecorino, Roncal, Smoked Gouda. Enjoy over the next 3-5 years.
