This is our second vintage of the Estate grown varietal Nebbiolo! The wine was elevaged for 18 months mostly (77%)in neutral French Oak. Uniquely, we used Acacia for the remaining aging. With the use of Acacia we see a round, creamy mouth feel with a very distinct hint of lemon and herb. This is perfect for accentuating the cherry, cranberry, raspberry, rose and anise of the varietal. The earthy minerality is very present but soft and lovely as the wine finishes. The technique used by the winemaking team highlights the terroir and brings a beautiful brightness to the finish of the wine. The wine has the classic distinctive brick-orange color.
Pair this wine with beef tenderloin, pork sausage, duck, roasted chicken and pork shank. Look for cheeses like burrata, full fat feta, soft triple-cream cheese, manchego, pecorino. Use sage, tarragon, black pepper, rose hip, coriander and fennel as you cook and serve with roasted garlic, shallot, truffles. You will impress everyone who experiences the pairing.
