2020 Cabernet Franc
This wine is deep and lovely, with a juicy mouth feel. On the nose the wine has aromas of raspberry, bramble, plum, blackberry, and violets. On the palate we find the continuation of these primary flavors with secondary flavors; a touch tobacco and black pepper which last through the gorgeous finish. This cabernet franc is beautifully crafted and because the fruit was so ripe, does not display the green pepper or pyrazine found in so many. This wine is so sophisticated and drinks so beautifully it is enjoyable to drink it by itself. When pairing this wine lamb dishes such as roasted lamb, especially with tasty Italian herbs and spices – are a classic pick. Beef tenderloins and filet mignon are excellent choices as well. The wine works beautifully with dishes that feature bell pepper or roasted pepper. Pasta and pizza – try it with dishes with spicy tomato sauce rich lasagna, dishes with mushrooms or a savory vegetarian pizza. Having brunch? A lush quiche with gruyere is perfect. Enjoy this wine now and watch as it matures in the bottle and begins to develop tertiary flavors of red plum and forest floor over the next 8 – 10 years.
