2019 Wild Boar Pinot Noir
The Fruit for this wine came from the Willamette Valley. The Soils in the region have marine sediment and whencombined with cool climate bring out great characteristics in wine. The wine has a lovely ruby color, medium body, light red fruit upfront and a long finish. On the palate we experience a beautiful subtle combination of fresh raspberry, a bright acidity, floral, spice, and earthiness. The wine is “nimble” with food and not overbearing. Food pairings are numerous. Because of the subtle nature of this wine the options are almost limitless. Roast pork with a fruit glaze accentuates the fresh fruit the wine. Salmon with mustard and brown sugar glaze will amplify the brightness. Coq au vin a dish from Pinot Noir’s home in Burgundy will compliment and enrich the texture of the wine. Roasted Chicken with a rich fruit reduction will bring out the spiciness of this Pinot Noir. Risotto with rich deep parmesan cheese will complement the vibrant acidy. Can you tell we love this wine?
