2016 Reserve Estate Sauvignon Blanc
What is the difference between the ‘Estate’ and ‘Reserve’ Sauvignon Blanc? While both are produced from our small 6-acre block of Sauvignon Blanc, the wines have quite distinct personalities. The differences primarily emerge from different harvesting times, winemaking decisions, and the aromatic and flavor divergences that arose from these two decisions. Specifically, for the Reserve, the fruit was allowed to hang on the vines for an additional 7-10 days relative to the ‘regular’ bottling, which allowed for further flavor and sugar development on the vine. This better enabled the wine to improve from an oak aging regimen, while the normal bottling was done entirely in stainless steel. As a result, this wine has more intense and complex aromatics, a rounder (yet still precise) mouthfeel, and a longer mouthfeel.
