Canary diamond yellow in appearance, our fourth vintage of Estate Chardonnay expresses a bouquet of mineral florality as its primary aroma, accented by lemon peel, hints of fresh mint leaf, indian spice and a kiss of oak, layered with a sweet, yeasty character. The body features a nice combination of balanced acidity and citrus fruit followed by sweet oak and white peach flavors. The finish is long, juicy, with hints of marzipan that lasts for minutes.
A blend of 69% Cabernet Sauvignon, 24% Merlot, 4% Cabernet Franc, and 3% Petit Verdot, this deeply hued wine has spent the past eighteen months in a combination of new and used French and American barrels. The Cabernet character of sweet bell pepper, blackberry, and mint is nicely meshed with the richness of the Merlot, Cabernet Franc and Petit Verdot layered underneath the tannic structure of the wine. With gentle aeration, there is also a perfumed nuance to the bouquet that begins to stand out. This wine is certain to age gracefully.
The Rosé Cuvée is a blend of traditional Champagne varietals Pinot Noir, Pinot Meunier, and Chardonnay. With a vibrant bouquet of fresh strawberries and pomegranates, the rosé serves as a wonderful aperitif to any meal. Notes of cherry blossom on the palate are complimented with the rich, rising dough components often associated with méthode champenoise. Wonderful with fried oysters and a spicy rémoulade, butternut squash ravioli with brown butter sage, and creamy panna cotta.
Created in the traditional mèthode champenoise style, this delicious sparkling wine is a classic blend of Chardonnay, Pinot Noir & Pinot Meunier. The wine presents a nice creamy mousse and pale copper color, with notes of brioche and white florals on the nose. Crisp & vibrant on the palate with a taste of fresh green apples and wonderful acidity, this sparkler has a lingering, juicy finish. Delicious with oysters, savory hors d’oeuvres, fried chicken, eggs benedict, and semi-soft cheeses.
Incredibly aromatic with bright notes of gooseberry and grapefruit, the 2015 Wild Boar Sauvignon Blanc is the perfect start to any Spring evening. The perfect marriage of Old and New World styles it has the classic elegance and balance of a Sancerre with the lush body and rich fruit you can expect stateside. Aged using a combination of stainless steel and our large upright oak barrels, creamy notes of vanilla are contrasted by the vibrant acidity that leaves your mouth watering. Deliciously refreshing on a warm day, our 2015 is also a wonderful compliment to an array of cheeses and lighter fare!
This graceful, dry rosé has a complex bouquet of strawberry, blood orange, and fresh flowers. Aged 50/50 in stainless steel and French Oak barrels, the deep salmon color is developed through skin contact of the Malbec dominated blend. The soft tannic structure allows it to be an incredibly versatile, food friendly wine.
Presenting with brilliant clarity and a deep garnet color to the rim, the wine exudes a wonderful nose of bright red fruits - cranberries, raspberries and strawberry jam - with notes of cinnamon and clove from nicely integrated oak. On the palate, the red fruits create a marriage of sweet and tart flavors with lovely fruity acidity shining through the very fine tannins. Enjoy with plum jam and manchego crostini, mushroom stew, and brie.
Our 2014 Wild Boar Merlot presents with a deep scarlet color while lively notes of violet and bing cherry jump out of the glass. A rich, medium body is followed by a lush dark chocolate finish with notes of baking spices attributed to its time spent in French oak barrels. While incredibly enjoyable now, with a little patience this wine will cellar beautifully and continue to develop for years to come.
Our Sanglier Noble is near and dear to our hearts, as we’ve been producing this blend since our founding in 2009. A blend of Bordeaux varietals, this Cabernet Sauvignon dominate wine is wonderfully rich on the palate with a lingering finish of dark cocoa and black currant. Aged 16 months in French Oak barrels, well integrated notes of cigar box and nutmeg shine through on the palate. With 21 % Malbec, classic characteristics of lush black plum violets jump out of the glass. Incredibly drinkable in it’s youth, the 2014 Sanglier Noble will continue to develop and cellar wonderfully.
